Ingredients

2 cups cooked shredded chicken (use leftover rotisserie chicken for extra flavor)

8 ounces cream cheese (or substitute with Greek yogurt for a lighter option)

1/4 cup chopped chives (green onions can be used instead)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt (adjust to taste)

1 teaspoon black pepper (adjust to taste)

1 package crescent roll dough

1 cup grated Parmesan cheese (freshly grated for best flavor)

1 cup heavy cream (or half-and-half for a lighter sauce)

1 cup chicken broth

2 tablespoons butter

2 tablespoons all-purpose flour

1/4 teaspoon ground nutmeg

1 tablespoon cooking spray or melted butter (for brushing)

Instructions

Preheat the Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the Filling: In a mixing bowl, combine shredded chicken, cream cheese, chopped chives, garlic powder, onion powder, salt, and pepper. Mix until smooth and well blended.

Prepare the Dough: Separate the crescent roll dough into individual triangles on a clean surface.

Fill the Dough: Place about 2 tablespoons of the chicken mixture on the wider end of each triangle. Fold the narrow end over the filling and tuck the sides slightly to form pillow shapes.

Arrange for Baking: Place the filled pillows onto the prepared baking sheet and brush the tops with melted butter or cooking spray.

Bake: Bake for 12–15 minutes, or until the pillows are puffed and golden brown.

Make the Sauce: In a saucepan, melt butter over medium heat and whisk in flour to form a roux. Slowly add chicken broth and heavy cream while whisking.

Add Cheese: Stir in grated Parmesan cheese and ground nutmeg. Continue stirring until the sauce thickens and becomes creamy.

Serve: Serve the warm chicken pillows drizzled with the creamy Parmesan sauce or with the sauce on the side for dipping.

Notes

Rotisserie chicken adds extra flavor and saves preparation time.

Seal the dough edges well to keep the filling from leaking during baking.

For a crispier top, brush with melted butter instead of cooking spray.

Add cooked spinach or mushrooms to the filling for extra flavor and nutrients.
