Ingredients

  • 1 1/2 lbs boneless chicken thighs or breasts
  • 1 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Vegetable oil for frying
  • 6 freshly baked biscuits (homemade or store-bought)
  • 2 tbsp butter
  • 1/2 cup honey
  • 12 tbsp hot sauce or 1/2 tsp red pepper flakes

Instructions

  1. Marinate chicken in buttermilk with a pinch of salt, pepper, and paprika for at least 1 hour.
  2. In a bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  3. Dredge marinated chicken in the flour mixture, pressing well to coat.
  4. Heat oil in a skillet over medium-high heat. Fry chicken 5–6 minutes per side, until golden and crispy. Drain on paper towels.
  5. In a small saucepan, melt butter with honey and hot sauce or red pepper flakes. Stir until smooth and slightly thickened.
  6. Split warm biscuits and place a piece of fried chicken inside each.
  7. Drizzle generously with hot honey and serve immediately.
