Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 3/4 cup grape soda (such as Grape Crush), divided
  • 1 tsp vanilla extract
  • Purple food coloring (optional)
  • 2 cups powdered sugar
  • 23 tbsp heavy cream or milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla and 1/4 cup grape soda.
  4. Gradually add dry ingredients to the wet mixture, alternating with the remaining 1/2 cup grape soda. Mix just until combined. Add purple food coloring if desired.
  5. Divide batter evenly into liners and bake for 18–20 minutes or until a toothpick comes out clean. Cool completely before frosting.
  6. To make the frosting, beat butter until creamy. Gradually add powdered sugar, 2–3 tbsp grape soda, and cream until smooth and fluffy. Adjust consistency as needed.
  7. Frost cooled cupcakes and decorate as desired.

  • Add grape gelatin powder to frosting for extra flavor intensity.
  • Frost with cream cheese or whipped cream if preferred.
