Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 3/4 cup grape soda (such as Grape Crush), divided
- 1 tsp vanilla extract
- Purple food coloring (optional)
- 2 cups powdered sugar
- 2–3 tbsp heavy cream or milk
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In another large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla and 1/4 cup grape soda.
- Gradually add dry ingredients to the wet mixture, alternating with the remaining 1/2 cup grape soda. Mix just until combined. Add purple food coloring if desired.
- Divide batter evenly into liners and bake for 18–20 minutes or until a toothpick comes out clean. Cool completely before frosting.
- To make the frosting, beat butter until creamy. Gradually add powdered sugar, 2–3 tbsp grape soda, and cream until smooth and fluffy. Adjust consistency as needed.
- Frost cooled cupcakes and decorate as desired.
Notes
- Use orange or strawberry soda for a different twist.
- Add grape gelatin powder to frosting for extra flavor intensity.
- Frost with cream cheese or whipped cream if preferred.
- Freeze unfrosted cupcakes for up to 2 months.
