The best French Dip Tortilla Roll Ups with juicy roast beef, gooey melted cheese, and crispy baked tortillas. Perfect served with savory au jus for dipping.
Roll Ups
1 lb thinly sliced roast beef (deli style or leftover)
1½ cups shredded mozzarella or provolone cheese
4 large flour tortillas
2 tablespoons butter, melted
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley
Au Jus Dipping Sauce
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper, to taste
Preheat the oven:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Prepare the roll ups:
Lay the tortillas flat on a clean surface. Layer sliced roast beef and shredded cheese down the center of each tortilla.
Roll the tortillas:
Roll the tortillas tightly and place them seam-side down on the prepared baking sheet.
Season the tops:
Brush the tortillas with melted butter and sprinkle with garlic powder, onion powder, and dried parsley.
Bake:
Bake for 12–15 minutes, or until the tortillas are golden brown and the cheese is melted.
Prepare the au jus:
While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan. Simmer for 5–7 minutes to develop flavor.
Serve:
Remove the roll ups from the oven, slice into pieces, and serve warm with the au jus dipping sauce.
Provolone cheese adds a classic French dip flavor, while mozzarella provides extra meltiness.
Use leftover roast beef for a quick and budget-friendly meal.
These roll ups also make a great party appetizer or game-day snack.
Add sautéed onions or peppers inside the tortilla for extra flavor.
