The Best Creamy One Pot Marry Me Butter Beans with tender beans, creamy broth, sun-dried tomatoes, and parmesan. A cozy, flavor-packed meal perfect for busy weeknights.
2.5 tbsp olive oil
1 large shallot, finely diced
3/4 cup sun-dried tomatoes, thinly sliced
1 cup baby tomatoes
4 garlic cloves, minced
2 tsp dried oregano
1/4 tsp chili flakes
3/4 tsp salt
1/4 tsp black pepper
1 cup milk
1 cup vegetable broth
28 oz butter beans, drained and rinsed
3.5 cups fresh spinach, tightly packed
1/3 cup grated parmesan cheese
1.5 cups mozzarella cheese, freshly shredded

Sauté the aromatics
