For the Cookie Dough:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract
For Coating & Topping:
1 cup granulated sugar
1 tbsp ground cinnamon
1 cup caramel sauce
Step 1: Prepare the Dough
In a large bowl, cream the softened butter and granulated sugar until light and fluffy (about 2–3 minutes).
Beat in the eggs one at a time.
Stir in the vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
Step 2: Prepare the Cheesecake Filling
Beat softened cream cheese, granulated sugar, and vanilla extract until completely smooth.
Transfer the mixture to a piping bag for easy filling.
Step 3: Shape the Cookies
