Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts
  • 23 fresh peaches, sliced (peeled or unpeeled)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme or rosemary (or 1/2 tsp dried)
  • 2 tbsp balsamic vinegar or white wine vinegar
  • 1/2 cup chicken broth
  • 12 tsp honey or maple syrup (optional)
  • Salt and pepper, to taste
  • 1 tbsp butter (optional, for finishing)

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden and nearly cooked through. Remove from skillet and set aside.
  3. Reduce heat slightly. Add garlic and herbs to the pan, cooking until fragrant (about 1 minute).
  4. Add peach slices and cook for 2–3 minutes until they begin to soften and release juices.
  5. Pour in balsamic vinegar, chicken broth, and honey (if using). Stir to combine.
  6. Return chicken to the pan and simmer for 5–7 minutes, until chicken is fully cooked and sauce thickens slightly.
  7. For extra richness, swirl in butter before serving.
  8. Serve hot with rice, couscous, or mashed potatoes.

Notes

  • Use fresh peaches for best flavor, but canned peaches (unsweetened or lightly sweetened) can work in a pinch.
  • Nectarines or plums make great substitutes for peaches.
  • For extra flavor, use bone-in chicken thighs (adjust cooking time).
  • Add red pepper flakes or sliced jalapeños for heat.
  • Stir in cream at the end for a richer sauce.
