Ingredients

8 oz semi-sweet or dark chocolate, chopped

1 cup heavy cream

1 cup cherry puree

2 tablespoons cherry liqueur (optional)

Cocoa powder or chopped nuts, for coating

Instructions

Place chopped chocolate in a heatproof bowl.

In a small saucepan, heat heavy cream over medium heat until just beginning to simmer.

Pour hot cream over the chocolate and let sit for 2 minutes. Stir until smooth and melted.

Stir in cherry puree and cherry liqueur (if using) until fully incorporated.

Cover the ganache and refrigerate for 2 hours or until firm.

Scoop about 1 tablespoon of ganache and roll into truffle-sized balls.

Roll each truffle in cocoa powder or chopped nuts until evenly coated.

Place on a tray and chill for another 30 minutes before serving.

Use high-quality chocolate for rich flavor and smooth texture.

Chilling the ganache thoroughly makes rolling easier.
