This one-pan cheesy ground beef rice is loaded with bold Tex-Mex flavor from Rotel, salsa con queso, and melty cheese. A quick and satisfying weeknight dinner!

Instructions

Main Ingredients

1 lb lean ground beef

1 cup diced yellow onion

1 tbsp minced garlic

2 cups chicken broth

2 cups minute rice

1 can (10.5 oz) Rotel diced tomatoes & green chilies

½ tsp salt

½ tsp black pepper

1 tbsp onion powder

1 cup salsa con queso

2 cups shredded nacho cheese

Notes

1. Brown the Beef

Add ground beef and diced onion to a large skillet over medium-high heat.

Cook, stirring and crumbling the meat, until fully browned.

2. Add Garlic

Stir in minced garlic and cook for 2 minutes, until fragrant.

3. Add Rice & Broth

Pour in chicken broth and add minute rice.

Stir gently until rice is fully submerged.

4. Simmer

Bring mixture to a boil.

Cover with a lid, reduce heat to low, and cook for 5 minutes.

5. Season

Remove lid and stir.

Add Rotel, salt, pepper, and onion powder.

Increase heat to medium and continue cooking until no liquid remains.

6. Make It Cheesy

Stir in salsa con queso until combined.

Add shredded nacho cheese and stir just until melted.

7. Serve

Scoop, serve hot, and enjoy!
