Ingredients
- 8–10 oatmeal cream pies (store-bought or homemade), divided
- 1/4 cup butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
- 1/2 cup heavy cream or whipped topping (for garnish)
Instructions
- Preheat oven to 325°F (160°C). Line or grease a springform pan.
- Crush 5–6 oatmeal cream pies and mix with melted butter to form the crust. Press into the bottom of the pan.
- Bake the crust for 8–10 minutes, then let cool slightly.
- In a large bowl, beat softened cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each. Stir in sour cream, vanilla, and cinnamon (if using).
- Chop 2–3 oatmeal cream pies and gently fold into the batter.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 50–60 minutes, until the center is just set and slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, top with whipped cream and remaining oatmeal cream pies, sliced or crumbled.
